Grilled Bruschetta

Most of us say Broo-shetta, but an Italian corrected me to say Broos-ketta. However you say it, simple and delicious!

 

This recipe is easy to do on the grill, which adds a smokey flavor that can’t be replicated any other way. As with most simple recipes, the quality of ingredients really makes a difference. Use sturdy bread, not soft and wimpy “wonder-type bread”, which really isn’t bread anyway. Get the best olive oil you can afford, high-quality Parmesan Reggiano, ripe tomato, and so on.

 

A truly simple treat is the bread with just olive oil and garlic. The original garlic bread. I have added a ripe tomato rubbed onto the bread after the garlic to add another flavor dimension-try it!

Servings: 8-10

Ingredients:

  • 8 slices bread, one inch thick
  • ½ cup extra-virgin olive oil, highest quality you can get
  • 1-2 garlic cloves
  • 1 cup cheese, grated, aged, such as parmesan, romano, asiago, etc. (optional)
  • fresh tomato, chopped
  • fresh basil, chopped
  • fresh oregano, chopped

Instructions:

  1. Toast one side of the bread on the grill until browned and crispy. Remove from the grill and set aside.

  2. Brush a generous amount of olive oil on each slice.

  3. Cut the garlic clove in half and rub along the crispy surface of the bread.

  4. Top with grated cheese, return to grill until cheese melts.

  5. Top with chopped tomato, basil, and oregano. You can use a prepared mix that comes in a jar if you can find it!

  6. Cut into quarters for serving as appetizers.
