Cranberry-Orange Muffins

Fresh cranberries are available in late fall through the winter months. This recipe uses its tart flavor against what would be a typical sweet muffin. The combination of spices adds a holiday touch, the allspice/ginger combination being more traditional.

Cranberry-orange muffins

Ingredients:

  • ___DRY INGREDIENTS___
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ¼ tsp cinnamon
  • ⅛ tsp cloves, ground (or allspice)
  • ⅛ tsp cardamom, ground (or ginger)
  • ___WET INGREDIENTS___
  • 2 eggs
  • 1 cup milk
  • ¾ cup granulated white sugar
  • 6 Tbsp butter, melted
  • 1½ cups fresh cranberries, chopped
  • zest of one orange, grated (orange part only)
  • juice of one orange

Instructions:

  1. Combine and whisk all dry ingredients in one bowl.

  2. Combine and whisk wet ingredients (besides cranberries and orange zest) in a separate bowl with a separate whisk.

  3. Combine wet ingredients into dry, add chopped cranberries and orange zest and combine until moistened. Do not overmix.

  4. Divide batter into 12 lined muffin cups and bake at 400° F for about 16 minutes, until golden brown and delicious.

  5. Serve within an hour of baking for best result.
